Hundred-year-old Listán Blanco vines, their canes braided into long cords the old Canary Island way, are what make Palo Blanco one of the most singular whites in Spain. Envínate draws it from four north-facing parcels near Los Realejos on Tenerife, between 500 and 850 meters above sea level, which is serious altitude for an island vineyard in the Atlantic. That braided training, called cordón trenzado, fits the house philosophy: farm and make wine the old-fashioned way and let each parcel speak for itself. The vineyard work stays minimal too, with sulfur, bentonite and silica as the only treatments. Envínate ("wine yourself") is four friends, Laura Ramos, José Martínez, Roberto Santana and Alfonso Torrente, who met studying winegrowing in Alicante and went on to build a devoted following. This 2018 has a few years in bottle now, so it's a chance to taste this cuvée with some age on it. Wine, first and foremost, is about pleasure, and this is a bottle for anyone curious about where Spanish white wine can go.

More about Envinate

Just a couple of years ago the wines of Envinate were very, very off the radar. Like everything in the world of delicious, naturally made wines, that has changed! Now we eagerly anticipate the next release, get just a case or less of each cuvée, and then watch them disappear in the blink of an eye.

For those unfamiliar, the group of four friends behind the project have nailed a locals' perspective on growing areas that the world is just coming to appreciate. Between Ribeira Sacra and the Canary Islands, they bottle clear expressions of the vineyards with which they work. Having started Envinate as a consultancy while in enology school, the friends set out to enrich the communities within these historically neglected areas. By splitting up and living in each of these regions, they have been able to foster relationships with older generations of growers and farmers allowing them to identify the best vineyard sites with a collective understanding beyond their experience.

With a strong technical education, The Four craft wines of precision and clarity. Never manipulated, never doctored, and a lack of chemicals in the vineyard, these wines are liquid art, a purists expression of terrior. They honor not only the region from which they come, but also the local stewards who have cared for these vineyards, often for generations.

Tasting Notes & Food Pairings

Perfect Pairings

Canarian papas arrugadas with mojo verde; grilled octopus with paprika and olive oil; salt-baked sea bream; oysters or clams a la marinera; Manchego or aged goat cheese.

Tasting Profile

Expect a taut, salty white in the volcanic Tenerife mould: lemon, green apple and white peach alongside smoky, flinty notes, a touch of dried herbs and a distinct sea-spray salinity. Typically light to medium-bodied with bright, mouthwatering acidity (think the tension of a good Chablis), finishing dry, long and stony.
