A vintage-dated Blanc de Noirs from a grower whose whole identity rests on the dirt under the vines: Terre d'Illite is named for the thick band of green Illite clay that runs beneath the village of Cuisles. Yes, it's the same clay that ends up in cosmetics. It gives their Meunier an almost Chardonnay-like lift and texture. Cuisles sits in a valley running perpendicular to the Marne, and the family has grown grapes there since 1750. Cédric Moussé, who took over in 2003, is the 12th generation to farm the land and the 4th to bottle the family's own wine. The cellar work is built to protect what that soil gives. Grapes are picked into very small crates so they aren't crushed before pressing, and nothing but stainless steel is used in the cellar. Finished Extra Brut, this 2022 shows a single year from a 9.5-hectare family estate, and it's the kind of grower Champagne you open with dinner instead of saving for a toast.

More about Famille Mousse

Growers since 1750 in the village of Cuisles, in a side valley off the Marne, Famille Moussé is now run by fourth-generation Cédric Moussé, who farms organically, runs the cellar on solar and geothermal power, and lets sheep, pigs and chickens work the vines. Meunier is the star here, about 80% of the vineyard, and the band of green illite clay under Cuisles gives it a lift and finesse that makes the case for Champagne's underdog grape.

Perfect Pairings

Gougères, roast chicken with morels, wild mushroom risotto, seared salmon with brown butter, aged Comté, or fried chicken.

Tasting Profile

Expect the fuller, red-fruited side of Champagne that Pinot Noir brings: red apple, redcurrant and a light note of brioche, with fine bubbles and a broad, vinous palate. Steel-only winemaking keeps the fruit pure and the acidity bright, and the Extra Brut finish is very dry, savoury and clean. It's a Champagne built for the dinner table.

Champagne

Champagne boasts some of the world’s greatest luxury brands with Krug, Cristal and, of course, Dom Perignon. But it’s also home to hundreds of small dynamic producers—farmers who grow their own grapes (often organically) and make (often with natural methods) tiny amounts of pure and absolutely delicious wine that reflect the individual personalities of their villages and terroirs. Toast with these wines, for sure. But also treat them like the great wines they are: taste, drink, explore!
