The estate flagship for Forge's growing red program. Forge Cellars was founded in 2011 by Rhône vigneron Louis Barruol (Château de Saint Cosme in Gigondas) with Justin Boyette and Richard Rainey, and built its reputation on bone-dry, single-vineyard Riesling from Seneca Lake's southeastern shore. Bellows is the team's home estate vineyard, and in many vintages it produces their most concentrated, ageworthy Cabernet Franc — a serious cool-climate red with the savory backbone the variety asks for. The 2024 is built for the long haul: pure Cab Franc, gently extracted, with the variety's signature herbal lift wrapped around a darker, more brooding fruit profile than the Willow bottling. Give it a half-hour in a carafe or set a few bottles aside for the next several years.

Perfect Pairings

Built for the table. Grilled lamb, beef short ribs, duck breast with cherries, mushroom-heavy pasta, hard cheeses. Give it a half-hour in a carafe and pour it slightly cool — Cab Franc shows best at a hair below room temperature.

Tasting Profile

Deep ruby. Black raspberry, plum skin, dried herbs, graphite, tobacco, a curl of woodsmoke. Medium-bodied, taut, with fine-grained tannins and bright cool-climate acidity. Long, savory, peppery finish.
