This is Hirtzberger's Singerriedel Riesling from 2001, so it has spent more than two decades in bottle. That makes it a rare chance to taste one of the Wachau's great dry Rieslings after someone has actually waited for it. Singerriedel rises steeply right behind the winery in Spitz, a small village squeezed between the mountains and the Danube, and it's one of the best sites in the Wachau. The ground is primary rock: gneiss, mica and schist. The soil is so mineral that the family has spent about twenty years rebuilding the vineyard's stone terraces. Smaragd is made for the cellar rather than the patio, and with this bottle the waiting has already been done. If you mostly know Riesling as young and zippy, or as sweet, this is the other side of the grape: dry, grown in rock and given time. Open it with a serious dinner and give it your attention.

More about Franz Hirtzberger

Franz Hirtzberger and F.X. Pichler are the two greatest producers of the Wachau and arguably of dry white wines in Austria. Located in the tiny village of Spitz, surrounded by mountains and the Danube, Hirtzberger makes Riesling that tastes like pure minerality and precision. His terraced vineyard names—Hochrain, Singerriedel, Steinporz—are synonymous with the greatest wines of the region.

Tasting Notes & Food Pairings

Perfect Pairings

Roast chicken with tarragon, trout with brown butter and almonds, Wiener schnitzel, choucroute garnie, pork loin with apples, aged Comté or Gruyère.

Tasting Profile

Expect the classic Wachau Smaragd Riesling profile: ripe peach, apricot and citrus peel over a stony, mineral core from the primary-rock terraces, with more body than most dry Rieslings and firm, lively acidity. With long bottle age, the style typically picks up honeyed, toasty and petrol notes, and finishes dry, long and savoury.
