This is the step up wine from Guillaume Gallois, a protege of Fabrice Gass (Alexandre Filaine in Damery). The wines just made it to the New York for the first time this year, and they've popped up on top wine lists (like COQODAQ). We feel lucky to have any to share at all!

More about Gallois Bouche

For any Champagne lovers out there trying to sniff out the next big thing before the secret gets out, here is a tip: follow the apprentices.

While there are a multitude of fascinating growers in Champagne right now, one of the absolute benchmarks for traditional, old-school winemaking is the singular Fabrice Gass of the tiny Alexandre Filaine estate. Thoughtful and without pretense, Fabrice makes profound, memorable wines in practically the same manner Champagne was produced a century ago. Fabrice Gass has gone full-bore cult, and we sell out of our small allocations nearly instantly.

When Fabrice was working as the barrelmaster at the legendary house of Bollinger, he mentored a young oenologist named Guillaume Gallois. Today, Guillaume has actually taken over Fabrice's old job at Bollinger as a hands-on winemaker. But more importantly for us, he has returned to his family's estate in the Premier Cru village of Vertus to launch his own wildly exciting project: Gallois-Bouché.

Guillaume is taking the exact same meticulous, one-man-band approach as his mentor, but applying it to a completely different terroir. While Fabrice works primarily with Pinot Noir in Damery, Guillaume is working with the intensely chalky soils of Vertus, focusing heavily on Chardonnay.

Champagne

Champagne boasts some of the world’s greatest luxury brands with Krug, Cristal and, of course, Dom Perignon. But it’s also home to hundreds of small dynamic producers—farmers who grow their own grapes (often organically) and make (often with natural methods) tiny amounts of pure and absolutely delicious wine that reflect the individual personalities of their villages and terroirs. Toast with these wines, for sure. But also treat them like the great wines they are: taste, drink, explore!
