From limestone-rich slopes near Saint-Bris, Goisot’s Côte d’Auxerre Blanc is a pure expression of northern Burgundy Chardonnay. Biodynamic farming underpins its clarity.

Vinified with native yeasts and aged on lees in tank and barrel, it balances texture with taut mineral drive. A defining example of the Auxerrois terroir’s quiet strength.

More about Guilhem & Jean Hugues Goisot

Jean-Hugues Goisot was among Burgundy's earliest fathers of biodynamic viticulture; his son Guilhelm carries the torch. From chalky soils near Chablis, they farm Aligoté, Sauvignon, and Chardonnay—the latter with a wow-factor for its ability to be at once concentrated and lithe. No one delivers more quality for the price, especially in modest appellations: the purity and minerality are simply flat-out amazing.

Flatiron's Take

From the Importer

Vineyard

Blend of terroirsand vine ages in the Cote d'Auxerre appellation.

Orientation

Mutiple parcels, exposure varies.

Soil

Clay limestone. Very chalky.

Viticulture

Biodynamically farmed (demeter certified). Focus on soil health, low yields, physiologic ripeness and overall balance in the vineyard (and in the resulting wines).

Vinification

Natural yeast fermentation in tank.

Aging

Aged in a combination of tank and demi-muids (600L barrels). Little to no fining or filtration.

Tasting Notes & Food Pairings

Perfect Pairings

Roasted white fish, creamy sauce, steamed shellfish

Tasting Profile

Pale white with stone fruit and mineral notes, bright acidity, delicate texture, clean refreshing finish.

Emme Deland

Undistinguished both in texture and minerality—and a couple of crumbly corks. The first disappointing purchase I’ve made from Flatiron.
