This Chassagne-Montrachet white comes from one named spot rather than the whole village. The label ties it to Les Fairendes, a single lieu-dit inside the Morgeot climat. It's made by Jean-François Germain, who farms just seven hectares across Meursault, Chassagne-Montrachet and Beaune and works out of a famously cold cellar. Whites make up three-quarters of what this small house produces. The farming is sustainable lutte raisonnée rather than certified organic, the grapes are picked by hand and the wines are made the traditional way. Nothing about it is flashy, and that's the point. The 2017 is dry, medium-bodied Chardonnay in an elegant style, the kind of Chassagne that goes for poise over power. Since 2018 his daughter Lucie has worked alongside him, so the next generation is already in the cellar. With several years in bottle, this is a good chance to see how a careful grower's single-site white comes together with some age.

Jean-François Germain runs seven hectares of Meursault, Chassagne-Montrachet, and Beaune from a cellar so cold it's legendary. His daughter Lucie joined in 2018, and together they're making whites (three-quarters of production) with the kind of tautness and concentration that gets allocations and whispered about in restaurants.
