Most German sparkling sits on slate. This one sits on limestone — and that's the whole story. The Hild family farms about five hectares in Wincheringen, in the limestone-rich Obermosel (Upper Mosel) near the Luxembourg border, where Elbling, one of Europe's oldest grape varieties, was nearly wiped out a century ago in favor of Riesling. Matthias Hild is the leading producer keeping it alive. This Sekt is 100% Elbling, made by the traditional method from vines within four kilometers of the cellar, with 9–18 months on the lees. Crisp, chalky, and full of personality, it's one of Germany's most distinctive sparklers and easily one of its best values. A bottle for Champagne lovers who want something genuinely off the beaten path.
