Here's a mature Pommard from the cuvée the Hospices de Beaune itself calls the approachable one, and at 2008 it has had plenty of time in bottle. Of the Hospices' three Pommard cuvées, the house calls Suzanne Chaudron "the good compromise" on ageing, because you can enjoy it younger than the other two. That makes a bottle with this many years on it an easy one to open without second-guessing. The vines came to the Hospices in 1979, when Monsieur and Madame Cyrot-Chaudron gave away their vineyards, several plots of old vines among them. The Hospices describes the cuvée today as a blend of six Pommard climats. The south-east-facing Les Noizons and Les Petits Noizons lead and bring volume and finesse. This one was raised and bottled (élevé) by Louis Jadot. It's village Pommard with real history behind it and bottle age already done for you.

More about Hospices de Beaune

The Hospices de Beaune is less a producer than an institution: a medieval charity hospital that owns some of Burgundy's best vineyards and sells its new wine every November at the most famous charity wine auction in the world.

Nicolas Rolin, chancellor to the Duke of Burgundy, and his wife Guigone de Salins founded the hospital in 1443 to care for the poor, and the first gift of vines followed in 1457. Over the centuries benefactors kept leaving it land, and today it holds about 60 hectares, roughly 85% of them premier and grand cru. Each cuvée is named for the donor whose bequest it comes from, such as Cuvée Baudot or Cuvée Madeleine Collignon.

The Hospices' own team grows and vinifies the wine, but on the third Sunday of November it is sold by the barrel, and the buyer takes home young wine that still needs to be raised. Each barrel goes to an éleveur, often a respected négociant or a top grower, who ages and bottles it and whose name appears on the label.

That makes every Hospices bottle a collaboration, and the same vineyard can taste quite different depending on whose cellar it went to. That's the fun of it: great terroir and a famous winemaker's hand in the glass.

Tasting Notes & Food Pairings

Perfect Pairings

Roast chicken with morel cream sauce, pan-seared duck breast with cherries, coq au vin, braised rabbit with mustard, or a slice of Comté or Époisses.

Tasting Profile

Expect the classic Pommard profile: dark cherry and plum with earthy, savoury notes, and hints of forest floor and leather as it ages. Pommard is typically one of the sturdier Côte de Beaune reds (think a firmer, more muscular cousin of Volnay), with fresh acidity, firm tannins that soften with time and a savoury finish.
