This is mature Chassagne-Montrachet Premier Cru from a parcel so small that there's barely any of it: Hubert Lamy farms just 0.16 hectares (about four-tenths of an acre) of Les Macherelles, and this bottle has had more than a decade to develop. Olivier Lamy took over his family's Saint-Aubin domaine in the 1990s and became one of white Burgundy's most closely followed growers, and this tiny Chassagne holding is one of the quieter corners of his range. The vines were planted in 1988 and sit mid-slope, facing east, just northeast of Chassagne village. They're rooted in shallow red clay over hard limestone bedrock, which tends to give you both richness and backbone. The vineyard is farmed organically. This one has already had time to do its ageing for you. Open it with a good dinner and give it some time in the glass.

Olivier Lamy took over this Saint-Aubin estate in the 1990s and transformed it from solid to legendary. Nineteen hectares of Côte de Beaune terroir (two-thirds Chardonnay) worked with obsessive attention and lutte raisonnée.
