A distinctive Premier Cru Chardonnay from a small 0.7-hectare walled vineyard overlooking Saint-Aubin, planted on hard chalk with large surface stones. The terroir's chalkier character yields a wine of elegant chiseling and precision. The 2023 shows reductive aromas of pear, apple, and wheat toast opening to a medium- to full-bodied palate that is satiny and racy. Olivier Lamy took over this Saint-Aubin estate in the 1990s and transformed it from solid to legendary. Nineteen hectares of Côte de Beaune terroir (two-thirds Chardonnay) worked with obsessive attention and lutte raisonnée. His Haute Densité cuvées, from vines planted at unusually high density, show what happens when you farm like you mean it. Concentrated, complex, Saint-Aubin's new standard.
