A red from Hubert Lamy, the Saint-Aubin domaine far better known for its electric whites, which makes this a quiet insider's pick. The Clos des Hates vineyard sits just above the village of Santenay, bordering the Premier Cru Passetemps, on a gentle slope of deep clay; Olivier Lamy planted these Pinot Noir vines in 2000 at his signature ultra-high density. Farming is organic in practice, with whole-cluster fermentation and long aging in barrel (mostly older oak) on the lees. The result is a precise, mineral-driven Santenay rouge with more finesse than the appellation's reputation suggests.

Olivier Lamy took over this Saint-Aubin estate in the 1990s and transformed it from solid to legendary. Nineteen hectares of Côte de Beaune terroir (two-thirds Chardonnay) worked with obsessive attention and lutte raisonnée.
