This is Etna's old "workers' wine," brought back to life: I Vigneri makes it from the share of grapes that vineyard owners hand over each year to the people who farm their vines. That was how workers on Etna used to be paid, and Salvo Foti and his team kept the custom going when it had nearly disappeared. The wine is made at Palmento Caselle in Milo, on the volcano's eastern side. It's a lava-stone winery-house built around 1840, where gravity moves the wine through channels with no pumps. The Nerello comes from Alberello Etneo bush vines worked by hand. It's made without refrigeration and sees no wood at all. Racking and bottling even follow the phases of the moon. The name comes from the Maestranzi dei Vigneri, a guild of Etna vineyard workers that existed in 1435, which suits a bottle that is really about the people who tend the vines. Hardly anyone makes wine like this anymore, and that's the reason to drink it.
