Six months on the skins in terracotta, and the result isn't orange so much as golden — this is Vermentino from the Ligurian coast pushed about as far as it can go while still tasting like Vermentino. Lunatica is 100% Vermentino, one of two skin-macerated whites made at Il Torchio in Castelnuovo Magra in the Colli di Luni zone, though the label reads Liguria di Levante IGT. The estate takes its name from the traditional communal olive press: the Tendola family ran the village press before they ever grew grapes. Everything here is farmed organically without the certificate — the winery is too small to absorb the paperwork — and the vineyard work and harvest are done entirely by hand, on one big contiguous parcel of 12 hectares rather than the usual Ligurian scatter of tiny plots. Fermentations run on indigenous yeasts. Total production across the estate is only about 3,700 cases, and the skin-contact bottlings are a small slice of that, so this is the kind of thing you buy when you see it.

Perfect Pairings

Grilled sardines or branzino with salmoriglio, chickpea farinata, trofie with pesto and green beans, fritto misto, a plate of prosciutto and melon, or a sheep's-milk pecorino.

Tasting Profile

Deep golden in the glass. Dried apricot, quince and orange peel with a salty, herbal edge and a little tea-like bitterness from the skins. Medium-bodied and dry, with firm acidity and a light grip of tannin that gives it real texture. Finishes savory and clean rather than sweet. Serve cool, not cold.
