Jacques Carillon makes some of the most mineral-driven, deliberately understated whites in the Cote de Beaune, and his village Puligny is where that style is easiest to read. The holdings are small - 5.5 hectares, carved out of the old Domaine Louis Carillon when it was divided between brothers in 2010 - and this wine comes from 2.71 hectares of village vineyard split across eleven little parcels, with vines averaging around forty years. Farming is near-organic: no herbicides, soil turned by plow and by hand, short pruning and severe debudding to keep production down. Elevage is restrained - a year in barrel with 20% new oak, then six months in stainless steel - so the limestone comes through rather than the wood. 2024 was one of the hardest growing seasons in recent Burgundian memory - a wet spring, relentless downy mildew and a very small crop - but the whites that came through show the tension and classic proportion the warm years lack. Drink it in the three to six years after bottling.

The Carillon family's roots in Puligny-Montrachet trace back to 1520, and today Jacques works 5.25 hectares of prime real estate with near-organic rigor. Eleven small parcels, all hand-harvested, aged in a six-year barrel rotation with restrained new oak—the result is limestone-driven white Burgundy of remarkable precision and minerality.
