Twenty years on, here's a premier cru Volnay from the year Domaine Jacques Prieur calls its "vintage of the century." The domaine says the weather in 2005 was perfect all season, and it describes its reds as very pure, powerful and concentrated, built for a long life and worth waiting for. This bottle has done that waiting. Champans has been in the family since 1899, when Claude Duvergey, the ancestor whose vines Jacques Prieur inherited, added it to the holdings. The domaine says the name comes from the plot itself: it's fairly steep, so the vines get good sun and ripen well. The soil has more clay than limestone, and Prieur says that gives firm wines with silky tannins, which is a fine combination to find two decades later. Nadine Gublin, the house oenologist since 1990, was making the wines in 2005. Decant it, give it time in the glass and serve it with a meal that's up to it.
