The estate that changed how growers think about Champagne. Anselme Selosse took over his family's small holding in Avize in 1980 after training in Burgundy, and then did in Champagne what nobody there was doing: cut yields hard, dropped chemical fertilizers, herbicides and pesticides, fermented with wild yeasts in old Burgundian barrels, kept sulfur low, and let the wines see oxygen instead of protecting them from it. A perpetual solera, the basis of the cuvee Substance, showed what a reserve could do for depth without relying on a single harvest. His son Guillaume took over in 2018. Initial is the house's Blanc de Blancs and its point of entry: Chardonnay from Grand Cru sites in Avize, Cramant and Oger, blended from three consecutive vintages, aged long on lees and finished with barely any dosage. Production is small and allocation is famously tight. Serve it cool, not cold, in a white-wine glass, and give it time in the glass.

More about Jacques Selosse

Anselme Selosse reinvented Champagne winemaking in the 1980s by applying Burgundy techniques to the bubbles, and his son Guillaume continues that legacy. With 37 acres of predominantly Chardonnay in Avize, they practice organic farming and extended lees aging that create Champagnes of uncommon depth, minerality, and complexity.

What has to say about this wine:

Tasting Notes & Food Pairings

Perfect Pairings

Roast chicken, aged Comté, mushroom and truffle dishes, scallops in brown butter, or grilled turbot. It handles food far better than it handles being treated as an aperitif.

Tasting Profile

Baked apple, quince, toasted hazelnut, honeycomb and a savory oxidative edge, with a smoky mineral undertow. Full-bodied and dry, with a soft mousse, firm acidity and a very long finish.

Champagne

Champagne boasts some of the world’s greatest luxury brands with Krug, Cristal and, of course, Dom Perignon. But it’s also home to hundreds of small dynamic producers—farmers who grow their own grapes (often organically) and make (often with natural methods) tiny amounts of pure and absolutely delicious wine that reflect the individual personalities of their villages and terroirs. Toast with these wines, for sure. But also treat them like the great wines they are: taste, drink, explore!
