More about Kirinzan Brewery

Kirinzan is textbook Niigata sake: light, clean and dry, made in a cold, snowy corner of Japan from local rice and very soft water.

The brewery was founded in 1843 at Tsugawa, now part of the town of Aga, beneath Mount Kirin, and today it is led by Shuntaro Saito, the seventh generation. The water is snowmelt filtered through beech forest and drawn from the Tokonami River. More than 90% of the rice comes from farmers in Aga itself, and the toji and his team work in the local rice fields in summer before brewing in the fall.

The range runs from Classic, the brewery's traditional dry everyday sake, up through junmai ginjo and junmai daiginjo. Serve them chilled with food, or try the Classic gently warmed.
