Trockenbeerenauslese is the rarest thing a Mosel grower ever makes, and this one is now two decades old — a mature, noble-sweet Riesling in a half-bottle from one of Winningen's great slate terraces. The site is Röttgen, just downstream of Winningen, Devonian slate with loess and quartzite on one of the steepest slopes along the river; the Knebels count it among the most defining vineyards around the village, its meagre soils and extreme pitch giving wines of unusual energy and inner tension. That tension is the whole point in a wine this sweet — it's what keeps the sugar from turning heavy. The family's roots in Winningen go back to 1642, though the modern estate dates only to 1990, and their terraces tower between the slate rocks in parcels small and scattered enough that everything is done by hand. Knebel describes this bottling as lovingly and meticulously selected, with beguiling complex fruit, incredibly dense and long. Mature German TBA rarely comes to market at all; when it does, this is the kind of address you want on the label.

Perfect Pairings

Best on its own as the dessert, lightly chilled. Otherwise: a wedge of aged Comté or Roquefort, tarte Tatin, poached quince, apricot tart, or seared foie gras on brioche.

Tasting Profile

Aromas of dried apricot, honey, candied orange peel and the toffee-and-smoke notes that come with age on a mature Riesling. Racing slate-driven acidity runs straight through the sweetness and keeps it bright rather than cloying. The finish is dense and goes on for a very long time.
