100% Airén from 50+ yearold vines aged for 100 days in 100-year-old clay amphora. Airén, Spain’s most planted grape, rarely receives this kind of serious attention—skin maceration, spontaneous fermentation, no fining or filtration transform it into something precious. Nectarine, brioche, honeysuckle, and almond suggest a wine that is far more than its humble origins; this is invisible history made visible.

More about Llamalo X Vestigium

José Joaquín Ballesteros is chasing obscure Spanish varieties and amphora clay in the middle of La Mancha—a wine region larger than Bordeaux where almost nobody's trying anything new. Each Vestigium bottling is a single variety: Airen, Monastrell, Cencibel. Organic farming, old vines, traditional methods. This is Spain's deep bench.

Varietal Notes

Vineyard

This wine is a blend of varieties led by Cencibel (the local strain of Tempranillo), Moravia, and Bobal, along with a few white grapes (Airen and Macabeo) that grow alongside the reds. The fruit comes from three vineyards with vines averaging 30-75 years old in the villages of Villarrobledo and El Provencio.

Soil

Calcareous clay

Viticulture

All viticultural work is done ecologically and without use of synthetics. Harvests are done by hand in small baskets.

Vinification

All the varieties are destemmed and fermented seperately with native yeasts in stainless steel. Macerations are brief typically around 5 days.

Aging

The pressed wines are aged for 3 months in centenarian locally made clay tinajas followed by 2 months in used French barrels. The wine is bottled with no fining or filtration.
