Luis Rodriguez Vazquez is the hero of Ribeiro, the Galician grower who since 1988 has revived the region's nearly extinct native grapes. Vina de Martin Escolma is his top white, made only in the best vintages from the lowest-yielding old Treixadura vines on granite terraces in Arnoia. Wild-fermented in assorted French oak barrels, raised on the lees, then given years in bottle, it's complex, age-worthy and deeply mineral. Escolma means selection in Galician, and this is the cream of his crop. Drink now or cellar for years.
