Marie-Noëlle Ledru retired after the 2016 harvest, so every bottle of this is finite — and this is the wine she was best known for. "Goulté" is Champenois dialect for the first-run juice off the press, the finest fraction of the pressing, and that is exactly what this is: 100% Pinot Noir Blanc de Noirs from her best mid-slope parcels in the Grand Cru village of Ambonnay, the heart of the two hectares she farmed essentially organically and by hand across Ambonnay and neighboring Bouzy. She fermented everything in steel and enamel tanks with no oak, let the wines go through full malolactic fermentation rather than blocking it with sulfur the way most of Champagne does, refused to filter or cold-stabilize, gave her vintage cuvées around five years on the lees, and riddled and disgorged every bottle by hand at very low dosage. 2009 was a warm, generous season with a dry harvest, and it made the most openly giving Champagne of her later vintages: rich and rounded, but still with that razor-like chalky quality underneath. From a private cellar and beautifully mature — drink it now, with food, from a proper white wine glass.
