If you want one bottle from Marie-Noëlle Ledru, make it a 2012 — frost and hail cut the crop to almost nothing, then a warm August and a flawless September ripened what survived, and Pinot Noir was the star of the vintage. This is her signature cuvée: 100% Pinot Noir Blanc de Noirs from the best mid-slope parcels of her two hectares in the Grand Cru village of Ambonnay, farmed by hand without herbicides or pesticides. "Goulté" is Champenois dialect for the first-run juice off the press — the finest fraction of the pressing — and she treated it plainly and precisely: fermentation in steel and enamel tanks with no oak, full malolactic fermentation rather than the sulfur-heavy blocking most houses use, no filtration or cold stabilization, around five years on the lees, every bottle hand-riddled and hand-disgorged at very low dosage. She retired after the 2016 harvest and sold off the rest of her juice, so this is a closed book. From a private cellar, and the most structured and concentrated of her back vintages — excellent now and with real staying power.
