More about Cayuse Vineyards

In 1996, Frenchman Christophe Baron was in Walla Walla when he spotted a field covered in softball-sized stones and saw what everyone else missed: terroir that reminded him of the great vineyards of France. That plot became the Cailloux vineyard, and Cayuse became the first winery in Walla Walla to farm biodynamically. Today there are five estate vineyards, Armada, Cailloux, Coccinelle, En Cerise and En Chamberlin, totaling about 50 acres. A stone-serious producer, in philosophy and geology alike.

Tasting Notes & Food Pairings

Perfect Pairings

Braised beef short ribs, roasted lamb with herbs, grilled steak with garlic butter, peppery wild boar, charred mushrooms

Tasting Profile

Complex and structured with dark plum, blackberry, and spice notes. Savory herbs and mineral characteristics accent the medium-bodied frame, with firm tannins and a focused, elegant finish with subtle oak integration.
