First, neutral spirits are infused with ripe bananas, then blended with spirit distilled from banana. Finally, a splash of aged cognac and a judicious amount of sugar is added for a liqueur that tastes straight up like Bananas Foster. Get any other banana liqueur you've had out of your mind, because this is the essence of a ripe banana, or freshly baked banana bread, and not at all cloying or artificial.

A family liqueur house in Angers, in the Loire Valley, since 1885, when pharmacist Emile Giffard turned his pharmacy into a distillery and created Menthe-Pastille, a clear mint liqueur made to cool hotel guests during a summer heatwave. Today his great-grandchildren, siblings Edith and Bruno Giffard, run the company, and the range has grown into the fruit and botanical liqueurs and syrups that serious cocktail bars reach for.

Banana liqueur produced by Giffard in Angers, France

Base spirit distilled from sugar beets

Plump, sun-ripened Brazilian bananas are slowly infused in neutral spirit and then blended with a spirit distilled from bananas

A touch of oak-aged Cognac and natural beet sugar is incorporated to add further complexity

The nose smells of ripe banana with warming baking spices and heady tropical notes. The palate starts with creamy banana, redolent of butter and baking spices, with hints of vanilla and ginger, and blazed with oak-aged cognac
