From the Calistoga vineyard that helped define California's Cabernet pantheon, in a tiny-production white-wine guise. The Eisele Vineyard is best known for Cabernet Sauvignon (first under Joseph Phelps, then Araujo, today Pinault's Eisele Vineyard Estate), but during the Bart and Daphne Araujo era a few precious rows produced this Sauvignon Blanc, often blended with a touch of Viognier for texture. This 2010 is pre-Artémis (the Pinault sale came in 2013), making it both a piece of Napa history and a snapshot of late-Araujo style. At fifteen years old, this is a mature collector's curiosity rather than a bright-fruited aperitif. Drink it soon, with food, and treat it as the relic it is.

Perfect Pairings

Mature whites of this caliber need savory company. Try roast chicken with tarragon, lobster with brown butter, hard mountain cheeses, or veal medallions in cream. Avoid bright citrus dishes that will fight the wine's tertiary character.

Tasting Profile

Fully evolved. Stone fruit gone honeyed, lanolin, beeswax, dried chamomile and a hint of orange peel. Texture is round, almost waxy, with the Viognier component giving floral lift. Acid still present but softened. A meditation rather than a refresher.
