Susucaru is Frank Cornelissen's most approachable wine, and it bottles Etna's volcanic wildness for your weeknight table. Cornelissen is no hippie: he's a Belgian scientist and marathoner who fell for DRC, moved to Sicily, and started making natural wine in Mount Etna's volcanic soils. The result is a wine that vibrates with life but stays clean, without the distracting funk that turns people off natural wine. This is a juicy, light-bodied red built around Nerello Mascalese. Serve it with a slight chill and drink it young and gleeful.
