This is Rachel Crosara's baby. She is the cellar master at Griesel, obsessed with Blanc de Blancs sparkling wines and for years she was never completely satisfied with her estate's Chardonnay bubbles—she just always wanted a little more.
After years of trial and error, she has nailed it with a singular process aligned with a more Jura-esque, oxidative method. The base wine matures in large, lined clay vessels with a bulbous top, allowing a thin layer of flor to form. The flor protects it from direct oxidation but imparts a crackling almond, toasty note, just a whiff of sous voile, and imparts a very stony, lip-smacking, laser-focused intensity beaming across your palate. Lovers of Tissot and Selosse will find something to appreciate here.
