A blanc de blancs aged under a veil of flor, borrowed from the Jura and dropped into a German sparkling house — the base wine rests in big-bellied lined clay vessels where a thin film of yeast forms on the surface, shielding it from oxygen while adding a savory, nutty edge you will not find in another Sekt. Griesel works out of Bensheim in the Hessische Bergstraße, a sliver of a region between Darmstadt and Heidelberg, in the cross-vaulted cellars of the old Hessian State Winery dug into the Grieselberg — the hill that gave the house its name when Petra Greißl-Streit and Jürgen Streit revived the site in 2013. Winemaker Rachele Crosara, an Italian oenologist who joined as cellar master in 2017, works only in the traditional method, with hand-harvested fruit, spontaneous fermentation and years on the lees. Prestige is the single-variety, single-vintage tier: one year in barrel, then three to four on tirage, then disgorged brut nature, meaning nothing at all is added back — no sugar to round the edges, nowhere to hide. If you like Tissot or the oxidative end of grower Champagne, this is the bottle to start with. If your idea of German sparkling is a cheap supermarket bottle, this will reset it.

Perfect Pairings

Made for oysters on the half shell, hamachi crudo with olive oil, or a plate of aged Comté and salted almonds. It also stands up to roast chicken and to a Jura-style chicken with morels and cream.

Tasting Profile

Almond skin, toasted sourdough and a faint saline nuttiness from the flor, with lemon pith behind. Medium-bodied, fine-beaded and very dry, with a stony, mouthwatering acidity that runs straight down the middle. The finish is long, chalky and taut.
