Notre Terre — 'our land' — is the natural-wine side project of Brunnhilde Claux, the gifted winemaker behind Domaine de Courbissac in the Minervois. Trained at Domaine Gauby and Priorat's Terroir al Limit, she farms biodynamically and works with the lightest possible touch in the cellar. This rose is the easygoing one: fresh, dry, and thirst-quenching, with bright red fruit and a savory, mineral lift. It's the kind of honest, unfussy bottle that disappears fast. Serve it well-chilled.
