If you've ever wanted to step into the world of Georgian amber wine without diving into something feral, this is your wine. Orgo is the project of the Dakishvili family in Kakheti — Gogi, the qvevri-tradition torchbearer, alongside his son Temur, who brings youthful energy to a winemaking lineage older than most countries. Dila-o is a 50/50 blend of Rkatsiteli and Mtsvane fermented in qvevri (large clay vessels buried underground) with native yeasts and bottled unfiltered. Skin contact is intentionally short — about a month — making this a lighter, more approachable take on amber wine, without sacrificing any of its textural intrigue. The vines are 50–80 years old, a rarity in Georgia, where Soviet-era replanting cleared most of the old material.
