First things first: it's not Lambrusco. 'Lambruschi' is the family name behind this Ligurian estate, whose founder worked the Carrara marble quarries before clearing woodland by hand in the 1970s to plant Vermentino in Colli di Luni. That is the narrow, dramatic strip where Liguria meets Tuscany, and where salty sea air runs headlong into cool air off the Apuan Alps. Il Casale is the house's classic bottling, drawn from the estate's younger vineyards on the lower hills, and it is the everyday version of what they do, which in this house is saying something. Expect white flowers, orchard fruit and the snap of salt that makes Ligurian Vermentino so useful at the table. Serve it very cold and don't overthink it.

More about Ottaviano Lambruschi

In the early 1970s, Ottaviano left the marble quarries of Carrara and bet on vineyards instead. His first Vermentino, bottled in 1982 from Costa Marina in Liguria's Colli di Luni, became legendary before the region even had official DOC status. His son Fabio took over in 1985, and now Ylenia (third generation) helps run the 12-hectare property. Their bone-dry, lithe Vermentinos sell out every year without fail. When a vineyard becomes a pillar of place, that's heritage.
