Hébrart has holdings in a number of top sites in both the Vallée de la Marne and the Côte des Blancs but is a specialist in the great village of Mareuil-sur-Aÿ, where you find top spots like the Clos des Goisses and Selosse’s Sous le Mont.

When he blends his top cuvées, he has a lot of great source material to choose from but even Hébrart’s entry-level wines are pitched absolutely perfectly for Thursday. They're elegant and complex, and will elevate any dish. But they're not flashy or over the top: more supporting players than showboaters.
"Hébrart’s wines have a broad appeal: if you like to think about your wines, they’re intellectually engaging enough to satisfy you; on the other hand, if you’re just looking to drink, they’re simply delicious." - Peter Liem, Champagne Guide

Antonio Galloni

"The NV Brut Selection, a cuv́ée from 50+ year-old vines, is rich and ample in feel. The natural weight and resonance of these old vines is what comes through most. The Brut Selection impresses with notable texture and tons of sheer appeal. It is another fabulous value in this range from Hebrart. The Selection is a blend of 70% Pinot Noir and 30% Chardonnay, equal parts 2015 and 2014, from Mareuil-sur-Ay, Avenay Val d'Or and Bisseuil." -Vinous

Robert Parker

"Disgorged in May 2020, the latest release of the NV Extra-Brut Premier Cru Sélection is showing well, exhibiting aromas of citrus oil, white flowers, peach and fresh pastry. Medium to full-bodied, elegantly layered and precise, it's charming and beautifully refined, with a somewhat more chiseled profile reflecting Hébrart's move from Brut to Extra-Brut for this bottling."

Wine Spectator

WS 91
"Rich and creamy in texture, with mouthwatering acidity providing a firm frame for flavors of glazed apricot, lemon pastry cream and candied ginger. Elegant and balanced, offering spice and floral accents on the finish."

Champagne boasts some of the world’s greatest luxury brands with Krug, Cristal and, of course, Dom Perignon. But it’s also home to hundreds of small dynamic producers—farmers who grow their own grapes (often organically) and make (often with natural methods) tiny amounts of pure and absolutely delicious wine that reflect the individual personalities of their villages and terroirs. Toast with these wines, for sure. But also treat them like the great wines they are: taste, drink, explore!
