The Knights Templar planted vines at Peyrassol back in the 13th century, and the estate has been making wine on this Provencal land ever since, first harvest documented in 1256. This is the flagship rose, the heart of the range, drawn mostly from old vines across the estate's clay-limestone soils and farmed organically. Pale as lychee, silky, and saline, it's exactly the kind of serious-but-effortless pink that made Provence rose famous. A cornerstone of Flatiron's summer every year, and for good reason. Provence rosé with an 800-year back story. The Commanderie de Peyrassol was founded by the Knights Templar in 1204 and today covers over 230 acres of vines in the Côtes de Provence. The rosés, built mainly on Grenache, Cinsault and Syrah, are pale, dry and delightfully fresh, the kind that taste like a sea breeze. Eight centuries of practice and it still knows what it's doing.
