The Knights Templar planted vines at Peyrassol back in the 13th century, and the estate has been making wine on this Provencal land ever since, first harvest documented in 1256. This is the flagship rose, the heart of the range, drawn mostly from old vines across the estate's clay-limestone soils and farmed organically. Pale as lychee, silky, and saline, it's exactly the kind of serious-but-effortless pink that made Provence rose famous. A cornerstone of Flatiron's summer every year, and for good reason. Perfect Provence rosé from an 800-year legacy. The Commanderie de Peyrassol was founded by Knights Templar and has been making wine ever since. Today they craft a pale, dry, delightfully fresh rosé (55% Cinsault, 25% Grenache, 10% Syrah, plus minorities of others) that tastes like a sea breeze and limestone. Eight centuries of practice and it still knows what it's doing.
