Pierre Gerbais's single-parcel Blanc de Blancs from Celles-sur-Ource in the Aube, where Aurelien Gerbais farms a Kimmeridgian-rich, Chablis-like terroir under organic principles. Champ Viole is a south-facing parcel of Chardonnay, vinified in stainless steel and blended with their perpetual reserve (started in 2011), aged 36 months on the lees and finished at extra brut dosage. Production is tiny, roughly 7,700 bottles. The aging in solera-style reserve gives the wine real depth and savory complexity, while the parcel's chalky Aube limestone keeps the nerve electric. This is grower Champagne at its most pinpointed: precise, fleshy, mineral, and exactly the kind of bottle that has put the Cote des Bar on the modern map.

"Based on the 2020 vintage and complemented with 50% reserve wines from a perpetual reserve spanning 2011–2019, Gerbais’s NV Extra-Brut Champ Viole is sourced from a south-facing mid-slope parcel of 50-year-old Chardonnay vines. The bouquet reveals aromas of pear, brioche, lime and white flowers, mingling with grapefruit zest. Medium- to full-bodied and fleshy, it carries a rich, enveloping core of fruit enlivened by vibrant acidity, concluding with a long, enveloping finish. Disgorged in October 2024 with two grams per liter dosage, the depth of reserves tempers the youthful character of the 2020 base vintage." —Kristaps Karklins

Perfect Pairings

Oysters with lemon and mignonette, scallop crudo with olive oil and sea salt, sushi and sashimi platters, bubbling Comte fondue, roast chicken with herbs, fish and chips, a proper Caesar salad with anchovies.

Tasting Profile

Dry and finely cut, with pear, white flowers, lemon curd, brioche and nutmeg from long lees aging. Medium-bodied, fleshy core, pillowy mousse, a long chalky finish.
