Pierre Gerbais farms 18 hectares in the heart of the Cote des Bar (Aube) at Celles-sur-Ource, where Aurelien Gerbais now leads the family estate his great-grandfather founded in 1910. Certified sustainable by Ampelos since 1996 and HVE, the domaine works a Kimmeridgian-rich terroir more akin to Chablis than to the Marne, and farms an unusually high proportion of the rare Aube Pinot Blanc alongside Pinot Noir and Chardonnay. Celles Rose is their rose extra brut, built on roughly half Pinot Noir with significant Chardonnay and Pinot Blanc, dosed minimally and drawn from estate parcels in the village. The result is one of the most gastronomic rose Champagnes around: savory, lifted, never confected, never sweet.

"Disgorged in October 2024 and drawn entirely from the 2021 vintage, Gerbais’s latest NV Extra-Brut Grains de Celles Rosé has turned out superbly. It opens in the glass with aromas evocative of cranberry, cowberry, nashi pear and orange marmalade, mingling with hints of rooibos tea. On the palate, it is medium- to full-bodied, with a crisp, vibrant core of fruit, mouthwatering acidity and a long, precise and sapid finish. As always, this cuvée hails from parcels in Celles-sur-Ource and is composed of 50% Pinot Noir, 25% Chardonnay and 25% Pinot Blanc." —Kristaps Karklins
