Almost all rose Champagne is made by blending a little red wine into white; this one is bled off the skins, the harder and rarer way. Pierre Gerbais farms in Celles-sur-Ource in the Cote des Bar, seventy miles south of Reims and closer to Chablis, on the same Kimmeridgian limestone, where Aurelien Gerbais took over the family's fifteen hectares in 2011 and rebuilt the range around single parcels. Beauregard is Pinot Noir from a north-facing plot isolated at the top of a windy slope, macerated overnight in the press and then two to three days in tank to draw color and grip from the skins. Fermentation and full malolactic happen in stainless steel, the base is blended with a perpetual reserve running back to 2011, and the bottles spend thirty-six months on lattes before disgorgement. Dosage is 3 g/L, extra brut, so there is nothing sweet papering over the structure. This is a rose built like a red wine first and a Champagne second.
