Pinot Meunier almost never gets a bottle to itself, and it almost never grows on Kimmeridgian limestone. Bochot is both. The domaine planted this small west-facing parcel in Celles-sur-Ource in the early 2010s using massale cuttings from the estate's older vines, out in the Cote des Bar, the southern edge of Champagne that sits closer to Chablis than to Reims. Aurelien Gerbais, the fourth generation here, has spent his tenure since 2011 turning the domaine into a set of single-parcel bottlings rather than a house blend. The wine is fermented and put through full malolactic in stainless steel, blended with a perpetual reserve running back to 2016, aged thirty-six months on lattes and finished at 3 g/L extra brut. Meunier usually plays the supporting role, valued for softness and early drinking; on limestone, with essentially no dosage, it comes out taut, savory and unexpectedly serious.

"From massal-selection Pinot Meunier planted in 2012 and disgorged in September 2024 with a dosage of two grams per liter, the NV Extra-Brut Bochot is based on the 2020 vintage, complemented by an equal part of reserve wines drawn from the 2016–2019 perpetual reserve. Sourced from a west-facing site where the fruit receives afternoon sun—preserving freshness—it opens with expressive aromas of wild strawberry, dried raspberry, peach and orange zest, mingled with pastry. Medium- to full-bodied, it is remarkably elegant in the context of what Pinot Meunier in the south of Champagne tends to produce, delivering a charming fruit core, racy acids and a long, saline finish.
