A cool-site cru from a record-early year, and that contrast is the reason to open a 2007 Pajè. Pajè is a small, bowl-shaped 1.8-hectare vineyard between Barbaresco village and Asili. It sits a little lower than Asili and is more open to the Tanaro River, so it runs cooler. Produttori calls it the brilliant, vertical one of their crus: high-calcium limestone, intense tannins, never short on acidity, and at its best after some age, when it still keeps its fresh fruit and floral notes. In Barbaresco, 2007 set a record for the earliest harvest. That came from a mild winter with no snow, not from summer heat, and the co-op picked slowly over nearly three weeks in spectacular weather. They call the vintage powerful, ripe and long-lived. Produttori makes Riservas only in great vintages, and 2007 earned one for Pajè. One bit of trivia: the very first Pajè, the 1967, was a small commemorative bottling for the Knights of the Truffle. This is single-cru Riserva Nebbiolo from a co-op of more than 50 grower families, long one of the best cellar values in wine, and by now somebody else has done the waiting for you.

Antonio Galloni

90 points

"Good full red. Plum, tobacco and clove on the nose. Round and sweet on entry, with plum and tobacco flavors dominating. Then broad but backward on the dry finish, which features building tannins and a strong spice character. Today I don't find this cru's typical bright, minty acidity. A bit warm on the back (all of these 2007s are carrying alcohol of 14.5% or more)." —Stephen Tanzer

Tasting Notes & Food Pairings

Perfect Pairings

Tajarin with butter and shaved white truffle, agnolotti del plin in roast-meat sugo, braised veal shank, or brasato al Barbaresco. Finish with aged Castelmagno or Parmigiano.

Tasting Profile

Expect classic Barbaresco Nebbiolo in its brighter, more vertical form: red cherry, violet and dried flowers, with hints of mint, tar and dried herbs. It's typically medium-bodied but firmly built, with intense, fine tannins and lively acidity from the cru's limestone. With age it usually picks up savoury, earthy notes while keeping its fresh fruit, finishing long and dry.
