A Beta Cabernet in magnum is a rare thing to find on a shop shelf: Ketan Mody's wines usually sell out to his mailing list within 24 hours, and this one comes from a true mountain site in Sonoma's Moon Mountain District. The Maus Vineyard is a west-facing block at about 1,000 feet with vines rooted in volcanic bedrock. If valley-floor Cabernet feels a bit too plush for you, this is the hillside alternative. Mody apprenticed at Harlan Estate and then went the other way with Beta. The house keeps alcohol low (rarely above 13%, which is a statement in Cabernet country), ferments with wild yeasts in large casks of at least 500 liters and otherwise leaves the wine alone. He thinks like a farmer, too. His other label, Jasud Estate, is his home ranch on Diamond Mountain above Calistoga, where he planted and tends the vines himself and has farmed organically and without irrigation from the start. A magnum of restrained, place-first mountain Cabernet is made for a long dinner around a full table.

More about Beta

Ketan Mody founded Beta to explore California fruit at its edge: low alcohol (rarely above 13%), minimal intervention, wild fermentations in massive casks of at least 500 liters. Mody apprenticed at Harlan before striking out to make wines that sell out in 24 hours via mailing list. That's a cult vote of confidence. Beta proves that serious, ambitious winemaking doesn't require cult pricing or self-importance.

Flatiron's Take

From the Importer

What has to say about this wine:

Tasting Notes & Food Pairings

Perfect Pairings

Dry-aged ribeye or a grilled porterhouse, ideally cooked over wood. Rosemary-crusted rack of lamb, short ribs braised in red wine, or venison loin with a juniper and red wine sauce. Finish with a wedge of aged cheddar or aged Gouda. A magnum wants a full table.

Tasting Profile

Expect a restrained style of mountain Cabernet: blackcurrant, dark cherry and cedar, with savoury herbal and graphite notes. It's typically full-bodied but not heavy, with firm, fine-grained tannins and the fresh acidity that comes with the house's low-alcohol approach. Think more classic Bordeaux than plush Napa, with a long, dry, savoury finish.
