Beta's wines usually sell out to the mailing list within 24 hours, so a Beta Cabernet Sauvignon on a shop shelf is a rare thing. Finding one in magnum is rarer still. Ketan Mody apprenticed at Harlan Estate before he started Beta, and he built the house around a very different idea of what California Cabernet can be. Alcohol rarely goes above 13%, fermentations are wild, he intervenes as little as possible, and the wines are made in very large casks of at least 500 liters. Mody is also a grape-grower, and his projects are based on Diamond Mountain in Calistoga. For Beta, though, he picks vineyards in Napa and Sonoma that he thinks have a voice of their own. If you've been wondering what a restrained, site-driven California Cabernet looks like, Lupina is a good bottle to find out with. The magnum makes it a natural choice for a long dinner with friends.

Dry-aged ribeye with a peppercorn crust; rack of lamb with rosemary and garlic; braised short ribs over polenta; wild mushroom risotto with aged Parmigiano.

Tasting Profile

Expect a restrained, lower-alcohol take on California Cabernet: red and black currant, cedar and graphite, with herbal and savoury notes rather than jammy ripeness. Large-cask ageing typically keeps oak in the background, leaving a medium body, fresh acidity and fine-grained tannins. Think closer to classic Bordeaux than to a plush Napa blockbuster, finishing dry and savoury.
