Old vines, no added sulfur and a barrel-raised rose that behaves more like a white Burgundy than a poolside pink. Romain le Bars spent seven years alongside Eric Pfifferling at L'Anglore before starting his own label, and that apprenticeship - energy over power - is audible in everything he bottles. He came to the southern Rhone from Paris in 2012, bought 1.2 hectares in Tavel in 2018 and made his first vintage in a garage; he now farms around nine hectares organically across Tavel, Lirac and the Vin de France land around them, with native yeasts, no fining or filtration and very little sulfur. This Lirac comes from vines over forty years old on sand and galet pebbles, direct-pressed and then fermented and raised in demi-muids and older barrels rather than steel, which gives it noticeably more texture and breadth than the average Rhone rose. It sits at 13% and stays light on its feet. Serve it cool rather than ice-cold, and in a real glass.

Romain le Bars is a 34-year-old Parisian who dropped out of law school, worked restaurants, and eventually left France to make wine in Tavel and Lirac in 2018 with 11 hectares. Light, natural wines—blends of Grenache and Syrah, carbonically macerated or direct press, aged in used wood. No fining, no filtration, almost no sulfur. Minimalist to the bone and all the better for it.
