Nigori is sake pressed through a coarse mesh rather than a fine one, so a fraction of the rice solids stay behind in the bottle — that cloud is the whole point, and it is why this pours creamy and full instead of clear and cutting. Junmai means pure rice: nothing in here but rice, water, koji and yeast, with no distilled alcohol added. Snow Maiden is brewed in Kyoto, the city that claims sake's birthplace and still holds more than thirty breweries, from Gohyakumangoku and Gin-Ohmi rice milled to 70 percent. The name belongs to Hanako, a koi said to have lived 226 years in the cold waters below Mt. Ontake. Invert the bottle gently once or twice before pouring to bring the sediment back into suspension, serve it properly chilled in a wine glass or a small tumbler, and point it at anything spicy.

More about Tozai

Tozai is built to make good sake an everyday pleasure rather than a special-occasion puzzle. The name means "East-West," and the whole line aims to bridge the two: classic examples of each sake style, labeled so a newcomer can find their way.

The sakes are brewed in Kyoto by Kizakura, a brewery founded in 1925 in Fushimi, the southern district whose soft, pure water has made it one of Japan's great brewing centers. Tozai is one of the best-selling imported sake brands in the US. You can spot the bottles easily by their hand-painted koi.

The range covers the main styles. Living Jewel is a clean, dry junmai. Snow Maiden is a creamy, cloudy junmai nigori. Typhoon is a sturdy, medium-dry table sake that stands up to warming or a cocktail. Serve them chilled (or warm, in Typhoon's case) in a wine glass, and pour them with dinner.
