Santorini does make red wine, and this is the bottle that explains why anyone should care. Mavrotragano was nearly extinct until the late 1990s, when Hatzidakis and Sigalas each made the first varietal versions and gave the grape a future; here it is blended half and half with the darker, firmer Mandilaria, from vines averaging around 60 years old. The fruit grows in the same volcanic pumice and ash as the island's famous whites, and the wine spends about a year in oak cask, which rounds the edges without adding sweetness. Expect a medium-weight red with real grip and a wild, herbal streak rather than plush fruit. Serve it a couple of degrees cooler than you normally would — it likes a chill.

More about Sigalas

Domaine Sigalas is one of the wineries that made Santorini Assyrtiko famous: a bone-dry, saline, volcanic white that ages far better than anyone expected from a sun-baked Greek island.

Paris Sigalas grew up helping in his grandfather's cellar on the island's north shore, then studied mathematics and taught it in Athens before coming home in 1991 to found the domaine with partners. By 1998 it had outgrown the family house and moved to a purpose-built winery near Oia, at the northern tip of the island. In 2020 a new majority investor arrived and day-to-day management passed to the team from Kir-Yianni in northern Greece, and Paris Sigalas has since stepped back to a small project of his own.

The domaine was an early convert to organic farming, in 1994, on Santorini's aspa: pumice, ash, lava and sand, almost free of organic matter, where ancient ungrafted vines are often trained low into basket-shaped kouloura to shelter the grapes from the wind, and yields are tiny. The range centers on Assyrtiko, from the steel-fermented classic Santorini to the lees-aged single vineyard Kavalieros, along with Aidani and Athiri, sweet Vinsanto, and reds from Mandilaria and Mavrotragano, a once nearly vanished grape the domaine helped revive. Expect razor acidity, salt and smoke, and whites that reward a few years in bottle.
