This is Ulli Stein's Grand Cru: the Palmberg-Terrassen, his spiritual home, a wall of ancient terraces built from dry-stacked slate walls and planted to ungrafted vines 90 years and older. The site is cut by a side valley that angles it away from the Mosel and funnels cool wind down over the vines — for most of its history that meant full ripeness arrived only in the best years, and in a warming climate it has become the estate's greatest asset. Bottled as Kabinett Trocken, which is to say bone dry, this is Stein's argument that cut matters more than size and lightness more than gobs of fruit. Ruthless, mineral and faintly phenolic, it's the kind of Riesling that rewards drinkers who want tension rather than comfort. Stein farms only parcels that are hard to work, commercially unknown and barely financially viable — he has to love them.

Perfect Pairings

Trout with brown butter and almonds, schnitzel with lemon, raw oysters, smoked eel or mackerel, roast chicken with herbs, or a plate of aged Gouda and cured ham.

Tasting Profile

Bone dry and light-bodied, with lemon, green apple and white peach over a strong smoky, stony slate note. The acidity is bracing and the texture has a slight phenolic grip, like citrus pith. Long, salty, mineral finish with no sweetness to round it off.
