Oiry is the Grand Cru village next door to Cramant that rarely gets a label of its own — Aurélien Suenen used to fold this fruit into the blend behind his C+C bottling, then decided the differences between his plots were the whole point and gave Oiry its own wine. It's one of only two non-vintage cuvées he makes, and the leaner, more chiselled of the pair: where the C+C is rich and broad, this is all cut and chalk. Suenen took over the family estate in 2009 and bottles nothing but Blanc de Blancs, farming primarily organically with some biodynamic practices but refusing to sign up to any one school — he treats them as reference points for a system built around his own terroir. Vinification runs to roughly a quarter in oak of various sizes and the rest in the old enameled steel tanks, and the wine is finished Extra Brut, so there's nowhere for a flaw to hide and nothing padding the finish. Grower Champagne at its most honest: a village you've probably never seen on a label, from a producer with no interest in getting bigger.

"The NV Extra Brut Blanc de Blancs Oiry Grand Cru is a pure Chardonnay. Creaminess, fresh and crusty baguette and Golden Delicious apple unite on an enticing nose with a bright green apple frisson as an overtone. Slenderness and delicacy define the body, but the flavors are full and almost generous. They evoke creamy porridge, mellow, freshly peeled yellow apple flesh, and a lovely sense of saltiness that has the ocean tanginess of an oyster shell. "Disgorged in July 2025 with a dosage of four grams per liter, Suenen’s newest NV Blanc de Blancs Grand Cru Oiry—vinified in nearly equal parts stainless steel and oak (approximately 25% new)—is drawn from the 2022 vintage and incorporates 50% perpetual reserve dating back to 2013. The wine articulates aromas of pear, white peach and dried flowers mingled with notes of freshly baked bread and citrus oil, with a faint hint of youthful reduction. The palate is medium- to full-bodied and concentrated, fleshy and textural, with a muscular core, ripe yet racy acidity and a chalky finish. "The most youthful of the Suenen releases, this blanc de blancs from the lesser-known grand cru-rated village of Oiry is more of an introvert. Gently complex with roasted spices over golden plum, clementine and toasted brown bread aromas. With just 50% fermented in oak, and the balance in steel, there's a straight-edged precision to the style here next to the breadth of the vintage cuvées, although some of the heat of the year is at play on the palate."
