Thierry Pillot introduces himself through Les Corbins, a wine that welcomes rather than interrogates. Based in Chassagne-Montrachet since 1900 when Jean-Baptiste Pillot left barrel-making for viticulture, the domaine now spans 13 hectares under Thierry's stewardship—a family evolved across four generations toward transparency and site expression. Les Corbins occupies Meursault's lower slopes where deeper, fertile soils favor a rounder, more generous Chardonnay than higher-altitude sites. Thierry works with organic viticulture (uncertified), minimal new oak, and 18 months of elevage on lees, prioritizing clarity over winemaking manipulation. The 2023 vintage—a strong year for white Burgundy—yields aromatic, fruit-driven Chardonnay with pear, peach, and white apricot singing across the palate. Accessible now yet built for aging, this is modern white Burgundy philosophy distilled into one graceful bottle: terroir first, technique transparent.

Under his watch, Chassagne-Montrachet and Saint-Aubin became showcases for non-interventionist winemaking—minimal new wood, careful vineyard work, and an obsession with precision. He also runs an eponymous micro-négoce buying organic grapes, not juice, creating fresh, salty, precise white Burgundy that tastes like it understood what it was meant to be from the start.
