Santenots is Volnay made elegant—refined red Burgundy built on limestone-clay soils where the southeast-facing slope catches morning sun without afternoon scorch. Thierry Pillot's only red wine, yet it carries the same philosophy as his whites: organic uncertified viticulture, minimal new oak, 18 months elevage on lees, no aggressive filtration. These choices allow Pinot Noir's "feminine" delicacy to emerge without manipulation, the limestone terroir creating wines of remarkable aromatic complexity alongside silken structure. Volnay's reputation rests on this balance—richness tempered by elegance, power expressed through nuance rather than force. The 2023 vintage, moderately favorable for Burgundy reds, produced riper fruit profiles, yet Volnay's natural altitude advantage provides balance that makes this wine sing. Thierry Pillot took over Domaine Paul Pillot in 2004 and immediately made a statement: this place was getting better. Under his watch, Chassagne-Montrachet and Saint-Aubin became showcases for non-interventionist winemaking—minimal new wood, careful vineyard work, and an obsession with precision. He also runs an eponymous micro-négoce buying organic grapes, not juice, creating fresh, salty, precise white Burgundy that tastes like it understood what it was meant to be from the start.
