Thierry Pillot took over Domaine Paul Pillot in 2004 and immediately made a statement: this place was getting better. Under his watch, Chassagne-Montrachet and Saint-Aubin became showcases for non-interventionist winemaking—minimal new wood, careful vineyard work, and an obsession with precision. He also runs an eponymous micro-négoce buying organic grapes, not juice, creating fresh, salty, precise white Burgundy that tastes like it understood what it was meant to be from the start.
