Single-vineyard mountain Cabernet from Sonoma's Moon Mountain, made by a winemaker who is a grape-grower first. The Maus Vineyard is a west-facing block at about 1,000 feet, with vines rooted in volcanic bedrock. If valley-floor Cabernet feels a bit too plush for you, this is the hillside alternative. Beta is Ketan Mody's project for exploring vineyards across Napa and Sonoma. His other label, Jasud Estate, is his home ranch on Diamond Mountain above Calistoga, and its story tells you how he works. He has planted and tended the vines there himself, parcel by parcel, farming organically from day one and without irrigation. Beta's first wine was a 2011 from the Montecillo Vineyard on the Sonoma side of Mount Veeder. This is hands-on, place-first Cabernet from someone who thinks like a farmer.

Perfect Pairings

Grilled dry-aged ribeye with rosemary; braised beef short ribs; herb-crusted rack of lamb; wild mushroom and farro risotto; aged cheddar or Comté.

Tasting Profile

Expect the classic mountain Cabernet profile: blackcurrant and black cherry with dried herbs, graphite and a stony, earthy edge from the volcanic soils. It's typically medium- to full-bodied rather than plush, with firm, fine-grained tannins and fresh acidity, finishing dry and savoury. Think of it as a more structured, less opulent take on valley-floor Napa Cabernet, built to age.
